About Me

christinem: I am a single parent of three wonderful young men. I work full-time during the day and go to college full-time at night. It seems like there is not any time left over to sit and relax or to spend time in the kitchen preparing meals for my family. I started to feel like we only saw each other in passing, so I decided that no matter how busy we were, we would sit down and eat together nightly...or I would pack up dinner and have a quick picnic on the sidelines before any games or practices. The place didn't bother me; I just wanted us together and not eating fast-food all the time. So, after many years of trial and error, I have found/developed some quick and tasty dinners that anyone can prepare in only 30-45 minutes. I hope you will enjoy them as much as my family.
